Although officially known as the Bay of Kotor, Boka – as it is called locally – is considered the southernmost fjord in Europe because of its wild landscape and precipitous cliffs that plummet into the sea. Zipping along its rocky coast in a speedboat will be an exhilarating experience, especially on the approach to the Blue Cave. Expect to be awed by the brilliant blue water and the hue that it casts on the cave’s interior, both the result of the way the sunlight reflects off the sandy bottom of the sea. Hop aboard the vintage White Pass & Yukon Route Railway for an immensely picturesque train ride high into the mountains, following a path blasted out of the rocks in 1898, during the height of the Klondike Gold Rush. As soon as the narrow-gauge train begins its ascent, you will understand why the beloved WP&YR is known as “The Scenic Railway of the World.” The train will climb almost 3,000 feet in just 20 miles and present one breathtaking view after another, from thundering Bridal Veil Falls to the rugged peaks at Inspiration Point. You will also pass over the soaring bridge that spans precipitous Dead Horse Gulch, named for pack animals loaded with prospecting gear that fell to the bottom of the gorge. This 1.5-hour adventure brings you up-close with swimming pigs as you watch them swim at a private island. Breathe in the salty air as you ride in a boat across electric-blue waters surrounded by wide-open ocean scenery. Travel to a private isle nestled among the northern Berry Islands. Here along the white-sand shoreline you'll meet a friendly group of pigs that call the island's tropical setting their home. View the landmarks of Hiroshima, some commemorating the atomic bomb blast here in 1945 and others reflecting the city’s celebration of peace. At the poignant Hiroshima Peace Memorial Park, you will behold the ruins of some of the few concrete buildings left after the atomic bomb was dropped. One of them, the Atomic Bomb Dome, has been declared a UNESCO World Heritage site and has become a symbol of Hiroshima. You will also browse the Peace Memorial Museum whose exhibits show Hiroshima before and after the bombing and personal artifacts from the victims that humanize the devastating event. The museum encourages visitors to make a vow for universal peace. While the mood there is somber, serenity is the overarching theme at Shukkei-en Garden. Besides being a wonderful respite from the hubbub of the city, the garden is a visual delight, as plants are always in bloom. Although the atomic bomb destroyed the garden, it has been fully restored.

Cruise the winding Monkey River, looking for wildlife in the surrounding rainforest, and then enjoy a hike with a naturalist that will explain the plants' medicinal uses.

After departing from the pier, you will soon arrive at a small village near the mouth of the Monkey River, where you will begin a leisurely cruise upstream. Along the way, the guide will provide enlightening commentary about the region's history, including how the economy boomed in the late 19th century when large volumes of bananas were exported.

Little evidence of that thriving time period remains, as the meandering Monkey River is bordered by undeveloped rainforest. Natural beauty and remarkably diverse flora and fauna are now the main attractions.

You can expect to see a variety of wildlife, including crocodiles sunning on the riverbanks, turtles popping their heads above the water's surface, and iguanas perched in the tree limbs. You might even spot a troop of black howler monkeys screeching in the forest.

Tropical birds are just as abundant along the river, especially wading birds such as herons, brightly colored tanagers and keel-billed toucans, the national bird of Belize. Toucans are easy to spot because of their large, colorful bills and how they croak like frogs.

Once you disembark, you will hike through the surrounding forest while the naturalist guide points out plants with medicinal qualities. For instance, leaves of the soursop are often brewed into a tea that reduces fever, and the wild yam has anti-inflammatory properties.

Learn to make traditional paella at a farm in nearby L’Horta, an agricultural region on the outskirts of Valencia where most of the ingredients grow or can be found. Valencians often spend weekends in L’Horta to relax and enjoy a dinner of paella. The gathering is a ritual of sorts, in which families come together to socialize and dine on a dish that was first prepared in this area in the 15th or 16th century. The owner of the farm will show you around the grounds and point out some of the many garden items that will end up in your paella. You will then join a hands-on workshop and learn the basics of preparing this once-humble dish from scratch. While the dish is simmering in a large circular pan, you will toast the upcoming meal with a glass of sangria. When the paella is finished, you might taste it straight from the pan, another Valencian tradition.

Visit Konoko Falls and Park, the Taino Indians called this Paradise and you’ll see why these original inhabitants choose this as a settlement site. You’ll hear the roar and feel the fresh mist of the spray from the spectacular waterfall. Follow the trails with your guide through this amazing rainforest. Visit the museum which features artifacts from the original inhabitants and early colonials that were excavated on site.

Stop at the colorful gift shop offering native products and handicrafts before re-boarding your coach. Enjoy a cup of Jamaica’s Blue Mountain Coffee and delicious banana bread as you relax at the Almond Tree Restaurant overlooking the Caribbean Sea.
